Puff-pastry khachapuri

Penovani is a khachapuri made of puff pastry (pena means “layer”): crisp layers outside, melted Imeretian cheese or sulguni inside. It is usually folded into a square envelope.

It is the most “street” of all khachapuri: baked in bakeries all over Georgia and taken away with morning coffee or for the road.
